Quick Bean Salad
This is a pantry-staple kind of recipe. It doesn’t take a lot of skill, money, ingredients or time to make but is super healthy, and can be whipped up in no time. And once you have your pantry stocked, which can take time due to budgets, you will make this one over and over again.
We always try to have a few cans of beans in the pantry. This can be made up with no notice, and I think this is also perfectly fine to serve up to guests, because it is that good!

Simple Bean Salad
A quick salad that can act as a side dish, light supper, lunch and more. And what's more, it is cheap and easily adaptable with whatever is left in the fridge and pantry.
Ingredients
- 1 can cannellini beans, drained
- 1/2 carrot, finely diced
- 1/2 celery stick, finely diced
- 1/4 red shallot, finely diced
- 1 Tbs parsley, finely chopped
- 1 Tbs white wine vinegar
- 3 Tbs olive oil
- 1/2 tsp mustard
- 1/2 lemon, juice
Instructions
- Put all dressing ingredients in a jar and shake
- Put all salad ingredients in a bowl
- When ready to serve, add the dressing

Variation
- Add in any vegetables you want. Finely diced is great, because you don't need much vegetable to get a little in every mouthful, and is a great way to use up leftover veges in the fridge
- Suggestions are raw fennel, radish, tomato, capsicum. Also cooked pumpkin, potato
- Spice it up with some fresh or dried chilli
- Add a can of tuna to make it a lunch

Substitutes
- Any vinegar is fine - white, red wine, balsamic, etc
- Any mustard is fine - English will add heat, but dijon, wholegrain and even horseradish will taste delicious
