This is a simple dressing that can go with any salad, and can be thrown in with a dish like the quick bean salad. It stores in the fridge if you make too much, but is easy to make small amounts.

A dressing transforms a salad and having a few up your sleeve is a must for little-effort-maximum-impact for flavour

Ingredients

  • 1 Tbs white wine vinegar
  • 3 Tbs olive oil
  • 1/2 tsp mustard
  • 1/2 lemon, juice

  1. Put all dressing ingredients in a jar and shake

Variation

  • Spice it up with some fresh or dried chilli
  • Add minced garlic
  • Add pepper/salt

  • Hard to make this one cheaper

Substitutes

  • Any vinegar is fine - white, red wine, balsamic, etc
  • Any mustard is fine - English will add heat, but dijon, wholegrain and even horseradish will taste delicious
